I've just had a lazy afternoon, a very English afternoon. I had tea and Scones, I made this earlier on today and just had to have a taste as soon as they had cooled down. I found the recipe in my Afternoon Tea cook book. They are very yummy and would be perfect for a little get together with the girls. I wanted to share the recipe with you so, here's how you make it:
You will need (makes approx. 12):
- Sunflower Oil (for oiling)
- 150g White self raising flour
- 150g Light brown self raising flour
- 1tsp Baking powder
- 1/2 tsp Ground cinnamon
- 75g Unsalted butter (diced and chilled)
- 50g Demerara sugar
- 150ml Milk
- 1 Ripe banana (mashed)
- Finely grated rind of 1 orange
- Pre-heat your oven to Gas mark 6/200 C/ 400 F
- Mix the flours, baking powder, cinnamon together in a mixing bowl.
- Add in the butter and rub between your finger tips until it looks like breadcrumbs.
- Mix in the sugar then make a little well in the middle of the mixture.
- Inside the well, pour in your milk, your orange rind and your mashed up banana.
- Mix the ingredients into a soft dough, I found at this stage I needed to add more white flour in to make it into more a doughy mixture.
- Roll out the dough to about 2cm thick or thicker if you would prefer.
- Use a cutter or the end of a glass (I used a glass) to cut out circles and place on your baking tray which is lined with greaseproof paper.
- Continue the sequence until you have used all your dough, make sure to leave a small space between the scones as they will rise and might mush together.
- Brush over the scones with some milk and place in the oven.
- Leave them in for 8-10 minutes, they should be slightly hard on top.
- Leave the scones to cool down for about 5-10 minutes.
Enjoy them with some whipped cream and strawberry jam! Also add a cup of tea to make it a very English afternoon, aha.
These are very easy to make and very tasty. I hope you like them as much as I did!

Mmmm this looks delicious, Im not a girl that likes bananas at all but this is just too yummy!
ReplyDeleteHaha I'm not a fan of bananas but I like the flavour, its so lovely, add more orange or half a banana if you want it less rich :)
