#tastytuesday Eggy Brekkie
This a simple breakfast or brunch meal, its a very healthy and filling dish full of protein to get you through the morning. If you are in a rush most mornings, don't fret! This only takes about 10 minutes to cook, not even that really.
Ingredients: Soya & Linseed bread, Mixed Leaves & 1 medium free range egg
I went for Soya and Linseed bread because I don't really eat bread that much and I prefer something like this. You can have whatever bread you like though. First of all, get a frying pan and fill with water and put on a high heat to bring to the boil. Once the water is boiling crack your egg in carefully so you don't splash the water over you, then bring it down to a medium heat.
As it doesn't take very long to poach an egg, I would pop your bread in the toaster after about 2 minutes of the egg cooking. After about 5-6 minutes your egg should be done. Put your toast on your plate, add butter if you wish, I don't like it personally. Put on a handful of mixed leaves and place your egg on top. For a bit of extra flavour, sprinkle a bit of salt and pepper over the egg.
There you go, a simple and quick healthy breakfast to keep you from going for that mid morning snack!
