Ingredients:
135g/4¾oz plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
2 tbsp cinnamon powder
1/2 Mashed up banana
130ml/4½fl oz milk
1 large egg, lightly beaten
130ml/4½fl oz milk
1 large egg, lightly beaten
Sift the flour into a mixing bowl, add in the sugar, cinnamon, baking powder and salt. Mix them all together, add in the milk, eggs and banana and whisk together. Whisk as much as you can to add air into the mixture so you get that lovely fluffy finish.
Get a non stick frying pan and put on medium heat. Add in a knob of butter or splash of cooking oil. When the butter is melted, spoon in some of the mixture into circles, however big you want your pancakes. They really don't take long to cook. As soon as you see some bubbles coming to the top of the mixture, flip it! It will only take about 1 minute on the other side. Repeat until you used all the mixture.
Pop them on the plate, add some bacon or maple syrup, what ever you fancy. Your pancakes, your rules.
